Note It's a highly viscous polymer. It differs from starch, cellulose, etc., in that it has carboxyl group, which is a polygalacturonic acid formed by glycoside bond of the aldehyde group of β-D-mannouronic acid. Its functional properties are as follows:
(1) It has a strong protective effect of colloid and strong emulsification of grease.
(2) Adding aluminum, barium, calcium, copper, iron, lead, zinc, nickel and other metal salts to the solution will produce an insoluble alginate.
